Cook the quinoa in stock or water. Keep aside.
Heat the oil in a pan over a medium flame.
Saute the Cauliflower florets with half the spices. Keep aside.
Add oil, mustard seeds & all the remaining spices in the pan. Sweat the onion in it.
Add the quinoa and the cauliflowers into the pan.
Taste and adjust seasonings as desired.
Garnish with chopped coriander, coconut, and fried curry leaves.
