Add some colour to your table with these healthy grilled Quinoa Beetroot patty, which is definitely going to leave your guests asking for more.
Wash the quinoa under running water. In a pan add the quinoa, double the quantity of vegetable stock and salt. Place the pan on high heat burner and after the mixture comes to a boil, reduce the heat and
simmer for 18 to 20 minutes. Once cooked the grains will become translucent.
Fluff it with a fork and stir in the lemon juice and chopped cilantro. Keep this preparation aside.
Heat oil in a pan over medium heat. Sauté garlic, onion and jalapenos for a couple of minutes.
Add in chipotle, boiled mashed red kidney beans and cook for another couple of minutes. Add in the
seasoning and take it off the flame.
Now add in the sweet potatoes, roasted beetroot, bell peppers and cooked quinoa.
Mix well and adjust the seasoning with salt and crushed black pepper.
Make small patties with a help of small ring mould or hand and keep it aside in the refrigerator for 30 minutes.
Heat a non-stick fry pan, drizzle a little oil and grill the patties for a couple of minutes, till golden brown on each side.
For plating drizzle dairy-free sour cream on the platter, make a small bed of hand-torn Iceberg lettuce, top it with warm quinoa patties and finish it with salsa and micro greens.
