Warm your soul on a rainy day with this healthy vegetable quinoa soup.
Add the olive oil to a saucepan and bring it to heat. Add the onions and sauté them till they turn pink.
Add half the amount of ginger and cook till it leaves its aroma (about a minute).
Now add the cabbage, carrots, and beans and cook them for about a minute.
In the meantime, dry roast the quinoa till the grains pop. Add the quinoa to the vegetables along with garlic and ginger powder.
Mix 3 cups of water to the saucepan and cook it while it is covered for 10 minutes. Add the cauliflower, green peas, and broccoli and cook for another 5 minutes.
Add the rest of the water at this stage as required for consistency.
Add the white pepper powder, vinegar, salt, and soy sauce and bring to a boil on simmer.
Garnish with ginger julienne.
